Ingredients seafood soup

FOR THE SOUP

  • 2 kg of various fish (scorpion fish, sea bream, red mullet, gurnard, cod, sea bass, redfish, saithe). 
  • 2 onions. 
  • 2 carrots. 
  • 1 leek. 
  • 1 fennel bulb. 
  • 3 tomatoes. 
  • 2 minced garlic cloves. 
  • 1 bouquet garni (bay leaf, thyme, etc.). 
  • 1 pinch of saffron. 
  • 3 tbsp. olive oil. 
  • 3 liters of water. 
  • salt pepper. 

FOR THE ROUILLE SAUCE

  • 4 minced garlic cloves. 
  • 1 small red pepper. 
  • 1 egg yolk. 
  • 1 slice of bread (the crumb). 
  • 1/4 liter of olive oil. 

For decoration

A few slices of bread, to make toast.
scampis or gray shrimps or 1 bag of seafood
grated cheese (optional). 


Preparation mediterranean  French soupe

1-For the fish soup, croutons and rouille sauce: Clean, empty the fish and cut them into large pieces. Wash the carrots, the leek, the fennel, and cut them into small dice as well as the onions then brown them over low heat in hot olive oil.
2-Add the fish, cook them for a few minutes, reserve a few nice pieces (the most presentable) to garnish the soup.
3-Wash and cut the tomatoes into small pieces, add them to the pan and season with garlic, bouquet garni, saffron, salt and pepper. Cover with hot water, and bring to the boil and cook ( 45 minutes).
4-After removing the bones, pass the soup through a grinder, let it simmer with the reserved pieces of fish as well as the scampis or gray shrimps or the bag of seafood.
5-Rouille of your fish soup, croutons and rouille sauce: In a mortar, crush the garlic with the pepper, add the bread crumbs soaked in the soup and pressed as well as the egg yolk. Pour the olive oil little by little and go up like a mayonnaise.
6-In a skillet, brown the croutons. Serve your fish soup, croutons and rouille sauce hot with grated cheese.

TIPS

True Aioli is an emulsion of crushed garlic, olive oil and a pinch of salt. Its processing is laborious, since the oil has to be added drop by drop and ground with a mortar.Aioli is extremely thick and is used as an ingredient in traditional Mediterranean dishes.

Is aioli bad for you?
Aioli cannot be used as a healthy dish because it is high in calories and cholesterol. It also does not provide enough nutrients and minerals. There aren't many ingredients and they're not that nutritious.
