Best and easy cupcake recipe

Before starting my article and if you haven't already, I advise you to follow my easy steps to help you when making your cake.

The beginner's cupcake base

For the base of our beginner cupcake, namely the cake, I used one of the simplest recipes there is, the four quarter! As its name suggests, this is a “so much for so much” recipe where each ingredient is put in the same quantity.


Ingredients for birthday cupcakes baby 

Size: for 12 cupcakes. 
Eggs: 120g. 
Sugar: 120g. 
Flour: 120g.
Half-salt butter: 120g.
Cooking: 20min. 


You can optionally use flour with integrated yeast or add a little yeast (1/2 sachet of 11g for example).


For my part, I do not use it because I like to have a "flat" rendering of the base of my cupcakes to put a nice topping on it. But I know that many of you like to have a little volume. 😉

The preparation cupcakes ideas for birthday party

The preparation cupcake recipe 

1- Preheat the oven to 180°C.

2- Melt your butter in the microwave. Be careful that it remains colored in opaque yellow and not translucent so that it retains all its good taste.

3- Put the sugar and the eggs in your food processor with the whisk.

4- Whisk everything until you get a frothy mixture. Your preparation will have doubled in volume.

5- Remove the whisk and add the flour to your device.

6- Put the sheet of your robot and mix.

7- Add the melted butter and mix until you get a smooth paste.

8- Fill your cupcake mold with paper cases.

9- Pour the batter up to 2/3 of each box.

10- Cook for about 20 minutes (check the cooking with the tip of a knife, the blade should come out dry).



Above all, let your cupcake bases cool completely before decorating them or you risk seeing your decorations (cream or other) melt.


Attention kids birthday party cupcakes 

Avoid opening the oven door during baking, otherwise the center of your cupcake will fall. Cooking times may vary from one oven to another, start checking after 3/4 of the time indicated by inserting the blade of a knife in the center. It should come out clean (without batter on it), but still moist (otherwise the cupcake is overcooked).

Once your cupcakes are finished baking, leave them in your oven for 10 minutes before taking them out.



The beginner's cupcake topping

For the topping, the cream that is put on top of our beginner's cupcake, I also started with a very simple recipe, a whipped cream of mascarpone and only mascarpone.
It is possible to invert part of the mascarpone with whipping cream (it is THE perfect cream for whipped cream), but whipped cream with mascarpone only has the advantage (or the disadvantage according to taste) of being very firm and therefore hold well once poached. So it's the perfect topping for a beginner's cupcake!
You can also use this whipped cream to cover a cake (filled or not), and make designs on it such as for a Rose Cake. But be careful, it is not to be used under sugar paste!

The recipe for the mascarpone whipped cream topping

Ingredients  easy birthday cupcakes

  • Size: 12 cupcakes.
  • Mascarpone: 600g.
  • Icing sugar: 120g.
  • Coloring or flavoring: optional.

The preparation whipped cream 

1- Put your salad bowl and the beaters of your food processor in the freezer for at least 10 min.
2- Take your bowl out of the freezer and put your mascarpone and icing sugar in it.
3- If necessary, add coloring or flavoring. For my part, as it is the Christmas period when I write the article, I put green dye… Yes yes, the orange powder that you see on my photo, it gives green.
4- Whip with your mixer for about 5 minutes. At first your mascarpone will become very liquid then it will solidify. On the other hand, once the whipped cream is firm enough, do not continue to beat “just in case for the principle”, otherwise you will transform your whipped cream into butter.


Well, usually the rendering is white of course.

This whipped cream should be kept in the refrigerator, even once placed on the cakes.

Making the Cupcake

All you have to do is fill a piping bag with this mascarpone whipped cream.
For the choice of the socket, for my part I used the star socket 1M. It is perfect for cupcakes. If you only need one, this is the one for me!
And here is my Christmas starter cupcake!
Once your cupcakes are covered with topping, store them in the refrigerator. Then you just have to take them out about ten minutes before tasting them so that the cream regains its suppleness.


Cupcake flavoring

The advantage of this cake base and this topping is that it is possible to flavor them with whatever you want!
For example, we can make filling inserts in the cake. All you have to do is make a hole in your cupcake, with a knife or with the tool made for it as I show you below.
Once your hole is made, fill it, for example with lemon curd (lemon cream) as I did. You can also put all kinds of creams, spreads etc.
You can also enhance your mascarpone whipped cream topping with creams, spread, mixed cake (like Oreos or speculoos), ganache, etc. It is according to your taste and your desires! ^^
For my part, I also flavored my whipped cream with lemon curd to make all lemon cupcakes.

For your information, I have calculated the nutritional values of this recipe.
Nutritional values per 100g:

  • Energy: 403 Kcal / 1685 kj. 
  • Protein: 5.78g. 
  • Fat: 22.85g. 
  • of which saturated fatty acids: 14.48 g. 
  • Carbohydrates: 43.18g. 
  • of which sugar: 25.48 g. 
  • Dietary fiber: 1.08g. 
  • Salt: 0.58g. 



Frequently Asked Questions related to this cupcakke

What can I put in a cupcake filling?
I want to tell you a little "whatever you want"! hehe. 
You just have to be careful that the texture of the insert you want to put in the filling is not too liquid (so that it does not go into the dough), but afterwards, there is no limit.
But even simplicity is super good! A simple chocolate ganache and Jérémy is over the moon! hehe
How much filling should I plan for the cupcake toppings?
Depending on the type of decoration you want to make (if you want a "flat" topping or a "rising" topping), you can plan between 40g and 60g of filling per cupcake.
For my part, I hate to run out of filling, so I always plan 60g of filling per cupcake. And what is left, we eat it in cottage cheese, on a little butter or with a spoon! hehe ^^
I would like a lighter, less dense mascarpone whipped cream.
It is true that the topping recipe that I present to you in this article is quite dense. But I wanted to present it to you as it is because it is perfect for beginners, it is easy to pocket and holds well and it makes a good base when you want to flavor it (for example by adding curd which "softens" the texture).
