Ingredients:

Slow cooker lamb mini tacos:

1 teaspoon of dried rosemary

1 teaspoon dried oregano
1 tablespoon of kosher salt
2 teaspoons black pepper (freshly ground)
1/2 cup of olive oil
1 (4 1/2 pounds) whole leg of lamb, halved
3 large shallots, cut into slices
5 garlic cloves
4 glasses of beer
16 warm corn tortillas
Lemon wedges for serving

Roasted Tomato Sauce and Green Apple:

Pound tomatillos (about 12), peeled, and rinsed
2 Granny Smith apples, quartered, and cored
1/2 medium white onion
2 hot peppers, cut into pieces
2 garlic cloves (not peeled)
2 tablespoons of olive oil
2 teaspoons of kosher salt and seasoning
1 teaspoon of freshly ground black pepper, and odd for the seasoning.
1/2 cup chopped fresh cilantro
2 to 3 tablespoons water (optional)

Directions:

  • Preheat the oven to 400 degrees Fahrenheit.
  • Then I combine the rosemary, thyme, salt, pepper, and olive oil in a small bowl, and stir.
  • Rub the mixture all over the lamb and transfer to the slow cooker.
  • Add the shallots and garlic and pour the beer around the lamb.
  • Mix, cover, and cook on high for 5 hours (the time the meat is tender with a fork).
  • Make the sauce while the meat is cooking.
  • In a rimmed baking sheet, place tomatoes, apples, onions, jalapenos, and garlic.
  • Stir in olive oil, salt and pepper.
  • Roast until tomatoes soften (about 20 minutes).
  • We can take it out of the oven and peel the garlic. Wait for the roasted vegetable mixture to cool down.
  • Transfer the vegetables and roasted garlic to a blender, add the cilantro and blend until smooth. If needed, add 1 tablespoon of water at a time, to help with mixing
  • Season the sauce with salt and pepper to your liking, then put it in a serving bowl and serve it.
  • As the slow cooker continues to rise, remove the meat and transfer it to a platter.
  • Finely chop the meat and get rid of any bones in it.
  • Then return the shredded meat to the slow cooker and cook for up to an hour.
  • Preheat the grill.
  • With the slow cooker off, transfer the lamb to a large cast-iron skillet, using tongs.
  • Reserve the juices in the slow cooker for serving.
  • Grill the lamb (7 minutes) until nicely crispy.
  • Finally, the reserved juices are drizzled over the lamb and served immediately with tortillas, grilled tomatoes, green apple salsa, and lime wedges.
